Last night I was craving something sweet after dinner but we had nothing in the house in the way of chocolate or such, so knowing I had some puff pastry in the fridge and some Granny Smith apples in a bowl on the kitchen table, I quickly made up a very simple, small open-top apple tart. I had experimented before with a similar item and discovered a nice pairing with tart apples is sour cream, so I used some of that and sweetened it with a teaspoon of caster sugar. It's a simple, quick-to-prepare dessert which uses minimal ingredients and which hit to spot nicely and luckily I found out today it works very well too with fresh baby figs drizzled with honey

I always have the puff pastry in my fridge. I love to use it for tarte tatin - the laziest version. With apples or with the thyme and apricots when they are in season.

That's the thing with puff pastry.. It's enormously versatile and I always some on hand in my freezer.. i just wish it was easier to make at home :)
Both the tarts look beautiful! I try to keep some puff pastry in the freezer too, but I used it recently and haven't restocked. I may have to try the apple tart with regular pie crust, since I can't wait to make it!

Haha! Louise ;) I got them in Woolies in Balmain, actually I was literally just there getting ingredients for a shoot tomorrow and I saw 4 boxes.... You'd better get your skates on... ;)
