As there is rum and chocolate in the cookie filling, I thought it might be a nice idea to try out a 'rum mocha' flavoured baked cheesecake. I have never made a baked cheesecake before so this was my first ever attempt, therefore I wanted to use a simple enough recipe and kept my fingers firmly crossed as it went into the oven.
I am delighted to say it was a success :) Woohoo! The middle didn't crack as I have read can happen frequently with baked cheesecakes and the center only very slightly dipped, so all in all for my first try I'm pretty chuffed with myself. It tastes very good too - albeit very rich so I think I'll be serving it in sliver-sized sizes.

Note - obviously I didn't use this recipe's instructions for the base rather I used the cookie filling instead. I also added a decent tablespoon of dark rum at the stage where you add the coffee.

Do you think it'd work as cheesecake truffle balls with the biscuit crumbs on the outside? Or am I getting a little ahead of myself? I don't really known what texture the batter's like.
Kell I think it could work alright, I'd probably whizz it up one more time in the food processor so the texture is really fine and then roll the truffle balls in the mixture. The recipe for 'Cheesecake Truffle Balls' sounds fab!
