Recently some photos of mine were bought for a food mag here in Sydney, but rather frustratingly I found out at the same time, some of these said pics were part of the three folders of images I had deleted by accident 2 months ago (*a-r-g-h-*), I have tried to recover them using many a recently downloaded 'Reclaim your treasured files trash can, 100% guaranteed!' computer program, but alas, to no avail... Anyway, I recreated the pics today and as part of the shoot I had some extra shots - the cake in the pic, is not actually part of the pics purchased so I thought I may as-well do something with them and post them on my blog as the recipe is a winner.
In real life, I try to eat as healthily enough on a day-to-day basis and recently with my baking I've been trying to get more goodness into the mix. Aka - I made some fabulous muffins last week into which I added pureed pumpkin instead of sugar and they turned out brilliantly. I'll try to make a second batch in the coming weeks and post some pics up along with the recipe. Until then, a super moist, incredibly terrific tasting chocolate beetroot cake.

You made me laugh! So does it mean that if I eat a whole bar of chocolate and finish it with one carrot, the carrot will negate all the fat? Or do I have to mix them together? love this math! :)

Hmm.. beetroot eh?! I have only recently deigned to consider it edible.. perhaps I shud try it with chocolate and if my new found like wanes or waxes...

Thanks again everyone, I'm seriously going to have to cut back on all the sweeties I've been featuring lately as Summer is coming here in Oz... and seeing as I now live in Sydney, if I don't go to the beach at least once this Summer, I'll be considered a freak, so bikini-guilt diet starts next week... *_*
Asha, you can't actually taste the beetroot, it really just adds moistness to the cake. Like with a Guinness chocolate cake - there's no actual taste of the stout.

Hi all - thanks for the comments, delighted to hear so many success stories with this cake since I posted it up. One thing thing - I have amended the recipe above to as I had the flour type and baking powder listings wrong. All fixed now. :)

I've been a hiding in the dark reader for a while, but I love your blog! Tried this recipe out last week and it turned out amazing! Don't have a food processor so shredded the beetroot like you would for a carrot cake, and the slightly crunchy bits of beetroot off-set the sweetness very well, thanks for a great recipe!

Beetroot is an amazing 'secret' ingredient and this recipe is awesome. Thankyou. I also add it, grated, to red onion marmalade to deepen the colour. And I make a mean beetroot icecream that has a glorious deeply red colour and tastes like a cross between raspberry and bramble. Very yum.
